What do you think about Unibet? Are they fast to limit winning players? Do they have high betting limits for major soccer championships (Serie A, Bundesliga, Premier League, etc.)?

They were my first book when I started way back and were very useful. They have me limited since and I don't really use them anymore. However since all the bets with them (especially once being limited) are on approval basis "You send in your request, they get back to you within 30 mins on whether bet is approved, partially approved or rejected" you can occassionally get some big bets in, if a brave trader is in. They've always been fair and honest to me.

Do you think Unibet and all these soft bookies start to limit when players make a lot of withdrawals? What if a player only just bet with them and never withdraw money for a long period of time?

from my experience it's the same if you withdraw 10 times or 1 time big
they just see how are your actions, on what you bet etc.
for ex. used them for table tennis, first bet was 900eur limit, than 500, than 200 etc. and so till 4k + at the end

I wish more books were setup like that. Yes, they're going to limit your max regular stake, just like any other euro book. They'll still take bets on bigger leagues though, after trader review.
